I love pasta, it is so easy and versatile. There are so many shapes and styles. For this dish I prefer spiral, bow-tie or spaghetti.
I also love pesto for the same reason. My favorite Pestos have fresh vibrant flavors, made with fresh herbs and citrus. Pestos can be made with just about anything. For this dish I am using my Thai Basil Pesto v2. It uses Thai Basil which has a different flavor than the Italian Basil which is commonly used. This pesto uses sesame oil which has a nutty flavor. I use lime in this pesto to balance and brighten the flavors.
To me citrus is liquid sunshine, it makes me happy!! You will find lemon, lime, orange or grapefruit juice in many of my dishes. Citrus brightens the flavors of every dish. Fresh herbs add fresh flavors, some are bright and some are earthy.
Thai Basil Pesto
Ingredients
- Thai Basil Pesto v2
- Pasta of your choice
- Pasta water
Make the Pesto
- Make the Pesto
- Do not heat the pesto, even if it was refrigerated.
Make the pasta
- Boil your pasta, following directions to al dente plus an additional minute.
- Set aside 3 cups of pasta water.
- Drain the pasta water.
Make a bowl (single serving)
- Add 3 Tbsp of Pesto to the bowl.
- Add 2 Tbsp of Pasta water to the bowl.
- Gently stir with a fork to combine (optional)
- Add 1 serving Pasta to your bowl, I use two spoons from a pasta comb.
- Use two forks to toss the pasta in bowl to coat the pasta.
- Repeat these steps in another bowl for each person.
