Bami Indonesian Stir-fried Noodles

My brother made this dish for me several years ago.   It was love at first bite, I enjoyed it so much I made it regularly.   His version used sliced beef and tiny shrimp, I adapted the recipe to be Vegan.   Today, I rotate this dish into my meal plan and still have to repeat it on the next meal plan.

Bami Indonesian Stir-fried Noodles

Ingredients

  • Fresh Pasta or 16 oz Spaghetti or 16 oz Soba Noodles or 16 oz Chow Mien Noodles
  • 2 cups Soy Curls
  • 2 C Cabbage, shredded (or 2 C Parsley or 2 C Spinach or Additional 1 C Celery)
  • 1 C Celery, think sliced
  • 1 Medium Onion (or 1 Bunch Scallions)
  • 1/4 C Soy Sauce
  • 4 Garlic Cloves Minced
  • 1 Tbsp Ginger Minced or Grated
  • 2 Tbsp Crushed Red Pepper
  • 2 C Soy Curls, Dried
  • 2 Tbsp Fish Sauce (vegan fish is great)
  • 1 Tbsp Fish Sauce, Additional
  • 3 tbsp Sesame Oil
  • 2 tbsp Olive Oil

Prepare the Soy Curls

  1. Add the Soy Curls to a medium bowl.
  2. Pour boiling water over the Soy Curls until the water is above the Soy Curls.
  3. Let sit for at least 5 minutes.
  4. Carefully pour out excess water.
  5. Carefully holding the bowl on it’s side, press as much water out of the Soy Curls as possible. An easy way to do this is to use a colander and the back of a wooden spoon.
  6. Add 2 tbsp of Fish Sauce onto the Soy Curls and toss immediately.

Cook Vegetables

  1. Add 1 tbsp Sesame Oil to the Pan, heat pan to medium heat.
  2. Add Garlic Stir for 60 seconds, Do not brown it.
  3. Add Onion and Celery, occasionally stir for about 2 minutes
  4. Add the Ginger.
  5. If using Parsley, let cook for a minute and then add Parsley.
  6. Cook until celery is crisp tender.
  7. Put on a plate and reserve for later.

Cook Soy Curls

  1. Add 2 tbsp Olive oil to the pan used for the vegetables.
  2. Heat pan to medium heat.
  3. Add the Soy Curls.
  4. Sir occasionally for 3 minutes, allowing the Soy Curls to dry out a bit.
  5. Put on a plate and reserve for later.

Cook the Noodles

  1. Cook the Noodles according to directions until “al dente”.

Stir-fry the Noodles

  1. Add 2 tbsp Sesame Oil to the pan used for the vegetables.
  2. Heat pan to medium heat.
  3. Add the Crushed Red Pepper.
  4. Stir for 15 seconds.
  5. Add the Noodles.
  6. Stir-fry the Noodles for 1 minute.
  7. 7, Add the Soy Sauce.
  8. Stir-fry the Noodles for 1 minute.
  9. Add the Vegetables and Soy Curls
  10. Stir-fry the Noodles for 2 minutes
  11. Pour the Noodles into a large bowl.
