Spaghetti with Vegan Meat Sauce

I make pasta a lot!!   It is so versatile, you can add just about anything to a pasta dish.   There is something about a tomato sauce, I just love it.   Chantal is also a Spaghetti and (vegan) meat sauce addict.   Everyone has a preference on the amount of sauce to use.   I like the pasta to be perfectly coated with sauce but Chantal prefers a lot of sauce.   This post includes photos of spaghetti with a lot of sauce.


Spaghetti with Vegan Sausage Meat Sauce

ingredients

Prepare the Meat Sauce

  1. Follow the recipe for Vegan Italian Sausage Crumbles and set aside
  2. Add 1 tbsp Olive Oil to a medium pan
  3. Sautee the Onion on low-medium heat
  4. Add the onion to the sausage crumbles, set aside
  5. Heat the Tomato Sauce on low to medium heat until is begins to get hot – stir occasionally.
  6. Reduce the heat to low.
  7. Prepare the Pasta.

Prepare the Pasta

  1. Boil water in a large pot.
  2. Add 1 tbsp Salt for each quart of water in the pot.
  3. Follow the pasta cooking instructions to cook until al dente.
  4. Reserve two cups of the water used to boil the pasta.

Combine everything

  1. Add the Sausage to the sauce, stir to combine.
  2. Add the Pasta to the sauce.
  3. Increase heat to medium.
  4. Stir to combine the pasta and sauce.
  5. If there is too much sauce, carefully remove some of the sauce and set aside.
  6. If the sauce is too thick, add 1/4 cup of the Pasta water, stir to combine.
  7. a. Repeat this step 6 until the desired thickness is achieved.
  8. Stir together for about 2 minutes.
  9. Carefully, move the pasta and sauce to a large bowl for serving.
  10. Plate and enjoy.

Tips

  • After plating, top with a little bit of Vegan Parmesan cheese.
  • For best results, make sure your pasta is done last. Prepare the sausage and sauce before preparing the pasta.
  • Multi-task the preparation of each part of the dish. Just remember, the pasta is the most important part.
  • This recipe is based on about 38 oz of sauce and 16 oz uncooked spaghetti.
