I make pasta a lot!! It is so versatile, you can add just about anything to a pasta dish. There is something about a tomato sauce, I just love it. Chantal is also a Spaghetti and (vegan) meat sauce addict. Everyone has a preference on the amount of sauce to use. I like the pasta to be perfectly coated with sauce but Chantal prefers a lot of sauce. This post includes photos of spaghetti with a lot of sauce.
Spaghetti with Vegan Sausage Meat Sauce
ingredients
- Fresh Pasta or Dried Spaghetti (I like Barilla)
- Vegan Italian Sausage Crumbles or Vegan Ground Beef Crumbles
- Tomato sauce (easy) or your favorite pasta sauce
- 1 Medium Yellow Onion – diced (optional)
Prepare the Meat Sauce
- Follow the recipe for Vegan Italian Sausage Crumbles and set aside
- Add 1 tbsp Olive Oil to a medium pan
- Sautee the Onion on low-medium heat
- Add the onion to the sausage crumbles, set aside
- Heat the Tomato Sauce on low to medium heat until is begins to get hot – stir occasionally.
- Reduce the heat to low.
- Prepare the Pasta.
Prepare the Pasta
- Boil water in a large pot.
- Add 1 tbsp Salt for each quart of water in the pot.
- Follow the pasta cooking instructions to cook until al dente.
- Reserve two cups of the water used to boil the pasta.
Combine everything
- Add the Sausage to the sauce, stir to combine.
- Add the Pasta to the sauce.
- Increase heat to medium.
- Stir to combine the pasta and sauce.
- If there is too much sauce, carefully remove some of the sauce and set aside.
- If the sauce is too thick, add 1/4 cup of the Pasta water, stir to combine. a. Repeat this step 6 until the desired thickness is achieved.
- Stir together for about 2 minutes.
- Carefully, move the pasta and sauce to a large bowl for serving.
- Plate and enjoy.
Tips
- After plating, top with a little bit of Vegan Parmesan cheese.
- For best results, make sure your pasta is done last. Prepare the sausage and sauce before preparing the pasta.
- Multi-task the preparation of each part of the dish. Just remember, the pasta is the most important part.
- This recipe is based on about 38 oz of sauce and 16 oz uncooked spaghetti.
