High Protein Vegan Bowl

I like to make high protein bowls for meals after a workout.   Potatoes, quinoa, couscous or rice are used as the base for the bowl.   Sometimes I plan out the ingredients and make bowls for a few meals.   Adding or subtracting ingredients from the bowl or changing the sauce can change greatly the flavor profile.

I made this bowl one day just using the ingredients I had on hand.   I needed to use the avocado and the asparagus at the time.   I already planned to make the pinto beans.   The TVP and the pickled onions were left over from tacos I made for lunch.   I roasted the sweet potatoes to compliment the flavors.

Ingredients

  • 1/4 cup Roasted Sweet Potato – cubed.
  • 1/4 cup TVP Ground Beef Replacement.
  • 1/4 cup Pinto Beans.
  • 1/4 cup Grilled or Broiled Asparagus – chopped.
  • 1/4 cup Avocado – chopped.
  • 1/8 cup Pickled Onions or 2 tbsp Salsa.
  • 1 pinch Salt.
  • 1 pinch Pepper.

Put the bowl together

  1. Add the ingredients to the bowl in rows like pictured or stacked the ingredients in order.
  2. Add Roasted Sweet Potato cubes.
  3. Add TVP Ground Beef Replacement
  4. Add Pinto Beans.
  5. Add Chopped grilled Asparagus.
  6. Add cubed Avocado.
  7. Add Pickled Onions.

Tips

  • Try adding the ingredients into a burrito sized tortilla. Subtract the Sweet Potato to make the burrito less heavy.
  • Make enough for several bowls.
  • Change the flavor of the bowl by adding or subtracting ingredients or change sauce.
