I love Pasta!! I especially enjoy pasta made with Semolina Flour. The texture is more pleasing. You will see several different shapes and styles of pasta in our recipes. Each shape adds different qualities to a dish. Best of all, Semolina pasta does not require eggs, it is just flour and water. Making your own pasta is fun and it tastes great.
This recipe is very detailed, it will guide you through each of the challenges you may face. Please know this recipe is very easy.

Get started
Collect all your ingredients and set up your work space.
Add ingredients
Add Semolina Flour to Stand Mixer Bowl. Add 1/4 cup of Water into the Stand Mixer Bowl.
Mix the dough
Using the Flat Beater attachment, begin mixing the dough at Speed 2 for about 30 seconds.
Gradually add water 1 Tbsp. at time, allowing the dough to mix for 30 seconds. Repeat until the dough starts to form into 1/4 inch sized pieces, smaller than dime size. Note: Not all of the water will be used. The dough can be a little moist but not wet.
Kneed the dough
Replace the Flat Beater attachment with the Dough Hook.
Start the Stand Mixer on Speed 2 and run for 2 minutes. It may take a little more time depending on the Air temperature and Humidity.
The dough should be a solid piece which may resemble a ball. If it has not come together, follow one of the steps below to fix it.
Shape the dough into a round ball. Cover with plastic wrap and let it rest for at least 5 minutes.

Prepare a space to roll the dough
You will need some space, the dough gets long as it is rolls out. You will have four pieces nearly 18 inches long. Your work surface should be clean and dry.
Dust your work surface with 2 – 4 four tablespoons All Purpose Flour. The flour will ensure the surface is free of moisture and will prevent the dough from sticking.
Prepare the dough
Cut the Dough into 4 pieces (Cut the dough in half, Cut the Halves in Half).
Use the Palm of your Hand and flatten each piece of dough.
Roll the dough
Dust the Dough Roller with All Purpose Flour.
Start with setting 1 on the Roller, Pass the dough through the roller one piece at a time. Catch the dough with the back your hand.
Repeat for settings 2, 3 and 4 on the roller. For better texture, do not skip numbers on the Dough Roller. The dough gets thinner as the number setting increases.
Lay out the dough
Lay the rolled dough flat on the floured work surface. If the surface of the dough is sticky to the touch, dust with a little All Purpose Flour. Be careful with overlapping.
Cut the Pasta
Dust the Pasta Cutter with Flour. Start the Mixer on Speed 4
If the surface of the dough is sticky to the touch, dust it with a little All Purpose Flour. Feed the dough into the cutter and catch it with side of your hand.
Make Pasta Nests
On a flour dusted plate or cutting board, swirl the cut pasta into a stack (nest).
Repeat until all of the dough is cut into pasta.
Cook the Pasta
Carefully drop the cut Pasta into the boiling water. Do not put much pressure on the pasta, it will cause the noodles to stick together.
Stir the pasta immediately and again every 30 seconds. Use a Pasta Comb to separate the noodles. Cook for a total of 90 seconds.
Immediately, remove the Pasta from the water. Preferably, add the Pasta directly into your sauce.

Add Salt to Cooking Water.

Notes
Dough fixes
- If the dough is too dry it will not form a dough ball. The dough should have a little moisture but not be wet.
- If the dough seems like it has the right amount of moisture and does not form into a ball: Use your hands and kneed the dough into a ball your at least 10 seconds.
- If the dough is damp or wet: add a Tablespoon of Semolina Flour and kneed the dough by hand for 10 seconds. Add the dough back to the Mixer and run for 1 minute on Speed two. Repeat until the the dough comes together.
- If the dough is Dry: add a Tsp. of Water and run the Mixer for 1 minute on Speed 2. Repeat until the the dough comes together.
