I like to make high protein bowls for meals after a workout. Potatoes, quinoa, couscous or rice are used as the base for the bowl. Sometimes I plan out the ingredients and make bowls for a few meals. Adding or subtracting ingredients from the bowl or changing the sauce can change greatly the flavor profile.
I made this bowl one day just using the ingredients I had on hand. I needed to use the avocado and the asparagus at the time. I already planned to make the pinto beans. The TVP and the pickled onions were left over from tacos I made for lunch. I roasted the sweet potatoes to compliment the flavors.
Ingredients
- 1/4 cup Roasted Sweet Potato – cubed.
- 1/4 cup TVP Ground Beef Replacement.
- 1/4 cup Pinto Beans.
- 1/4 cup Grilled or Broiled Asparagus – chopped.
- 1/4 cup Avocado – chopped.
- 1/8 cup Pickled Onions or 2 tbsp Salsa.
- 1 pinch Salt.
- 1 pinch Pepper.
Put the bowl together
- Add the ingredients to the bowl in rows like pictured or stacked the ingredients in order.
- Add Roasted Sweet Potato cubes.
- Add TVP Ground Beef Replacement
- Add Pinto Beans.
- Add Chopped grilled Asparagus.
- Add cubed Avocado.
- Add Pickled Onions.
Tips
- Try adding the ingredients into a burrito sized tortilla. Subtract the Sweet Potato to make the burrito less heavy.
- Make enough for several bowls.
- Change the flavor of the bowl by adding or subtracting ingredients or change sauce.
