Fill Pasta Pot with Water for Cooking. It should be 4 to 6 Quarts.
Add Salt to Cooking Water
Begin heating water to bring it to a boil. Start making the dough.
Add Semolina Flour to Stand Mixer Bowl.
Add 1/4 cup of Water into the Stand Mixer Bowl.
Using the Flat Beater attachment begin mixing the dough at Speed 2 for about 30 seconds.
Gradually add water 1 Tbsp. at time, allowing the dough to mix for 30 seconds. Repeat until the dough starts to form into 1/4 inch sized pieces, smaller than dime size. Note: Not all of the water will be used. The dough can be a little moist but not wet.
Replace the Flat Beater attachment with the Dough Hook.
Start the Stand Mixer on Speed 2 and run for 2 minutes. It may take a little more time depending on the Air temperature and Humidity.
The dough should be a solid piece which may resemble a ball. If it has not come together, follow one of the steps below to fix it.
Shape the dough into a round ball, Cover with plastic wrap and let it rest for at least 5 minutes.
If the dough is too dry it will not form a dough ball. The dough should have a little moisture but not be wet.
If the dough seems like it has the right amount of moisture and does not form into a ball: Use your hands and kneed the dough into a ball your at least 10 seconds.
If the dough is damp or wet: add a Tbls. of Semolina Flour and kneed the dough by hand for 10 seconds. Add the dough back to the Mixer and run for 1 minute on Speed two. Repeat until the the dough comes together.
If the dough is Dry: add a Tsp. of Water and run the Mixer for 1 minute on Speed two. Repeat until the the dough comes together.
An area large enough for the rolled out dough is needed. The surface will be covered with flour, be prepared for a little mess. I use my Kitchen Island. To reduce the mess, I use three large cutting boards. The work surface should be clean and dry.
Add a small amount of flour to your work surface and spread the flour on the surface. It should resemble a very thin layer of dust. The flour will ensure the surface is free of moisture and will prevent the dough from sticking.
Cut the Dough into Quarters (Cut the dough in half, Cut the Halves in Half).
Use the Palm of your Hand and flatten each piece of dough.
Dust the Dough Roller with Flour.
Start with setting 1 on the Roller, Pass the dough through the roller one piece at a time. Catch the dough with the back your hand.
Repeat for settings 2, 3 and 4 on the roller. For better texture, do not skip numbers on the Dough Roller. The dough gets thinner as the number setting increases.
Lay the rolled dough flat on the floured work surface. If the surface of the dough is sticky to the touch, dust with a little flour. Be careful with overlapping.
Dust the Pasta Cutter with Flour.
Start the Mixer on Speed 4.
If the surface of the dough is sticky to the touch, dust it with a little flour.
Feed the dough into the cutter and catch it with side of your hand.
On a flour dusted plate or cutting board, swirl the cut pasta into a stack (nest).
Repeat until all of the dough is cut into pasta.
Carefully drop the cut Pasta into the boiling water. Do not put much pressure on the pasta, it will cause the noodles.to stick together.
Stir the pasta immediately and every 30 seconds. Cook for a total of 90 seconds.
Immediately, remove the Pasta from the water. Preferably, add the Pasta directly into which ever sauce you are using.
